The quality of Vallespinos olive oils starts from:
- The geographical location of the farm: Andalgala Valley, Province of Catamarca Argentina, at the foot of the snow-capped mountain of Aconquija at 850 m.a.s.l.
- Care of the olive grove: a meticulous work is carried out on each tree to obtain as a result an excellent quality in the fruit.
- Early harvest: fundamental factor to obtain an extra virgin olive oil with COI quality attributes.
- Process: we have a demanding and meticulous production process to achieve the highest international quality standards. Description:
1) Harvest
The olives are extracted and immediately taken to the processing plant.
2) Reception
In this step the quality of the raw material is controlled and then it is subjected to a wash to eliminate all kinds of impurities.
3) Grinding
The olive is crushed to obtain a homogeneous paste and then put into the mixer.
4) Kneading
At this stage the dough is kneaded to improve the oil separation process with the rest of the components.
5) Separation
Through German Westfalia technology, the oil is separated, obtaining marc and vegetable water as waste.
6) Storage
The oil is stored in stainless steel AISI 304 tanks, maintaining temperature conditions and preserving contact with light and oxygen.
7) Packaging
Fractionation maintaining the highest quality standards.
